I'm afraid the mozzarella cheese is hiding all the emeraldy goodness, so here is a picture before I put on the cheese:
Emerald City Chicken Chesapeake Recipe:
4 boneless chicken breasts, pounded flat
1/4 Cup flour
1/2 Cup butter (divided)
1 clove garlic (minced)
2 Cups fresh spinach washed and chopped (I used baby spinach with stems removed & forgot to chop!)
8 oz fresh mushrooms, sliced (I used an 8oz can of sliced because that's all I had)
1 Cup crab meat (I used a 6oz can of leg meat and it was plenty)
sliced mozzarella cheese to taste
Pound chicken flat with a mallet and lightly flour. Melt 1/4 cup butter in a skillet and brown chicken for about 4 minutes or until nicely browned. Remove from skillet and place in a lightly greased (zero cal butter spray) glass casserole dish. Set aside. Add remaining butter to skillet and saute the garlic, mushrooms and spinach for 3 to 5 minutes. Remove from heat. Top the chicken with the crab meat. Cover crab meat with spinach mixture and top with mozzarella cheese slices. Bake at 400 for 7 to 8 minutes.
