What's for dinner: Cabbage Rolls & Candied Carrots


Cabbage Rolls

12 cabbage leaves (boiled until pliable, ~2 minutes)
1 # hamburger (the leaner, the better)
1 cup cooked rice
1 egg 
1/4 cup milk
1/4 cup minced onion
1 1/2 tsp Salt
1 1/2 tsp Cracked pepper

Mix into meat mixture. Wrap meat mixture into the individual cabbage leaves. Roll and place in lightly greased 9X13 casserole.

Sauce:

2 cups tomato sauce (I used prego roasted garlic spagetti sauce)
1 tbsp brown sugar
1 tbsp lemon juice
1 tsp worcestershire sauce

Spoon sauce over rolls in pan and cover with foil. Bake at 350 for two hours. VERY SAVORY~

Candied Carrots:

1 # sliced carrots
2 tbsp butter
1/4 cup packed brown sugar
pinch of salt
pinch of cracked pepper
  1. Place carrots in a pot of salted water. Bring water to a boil, reduce heat to a high simmer and cook about 20 to 30 minutes. Do not cook the carrots to a mushy stage!
  2. Drain the carrots, reduce the heat to its lowest possible setting and return the carrots to the pan. Stir in butter, brown sugar, salt and pepper. Cook for about 3 to 5 minutes, until sugar is bubbly. Serve hot!
